Cooking Instruction: Deep Fry Heat oil in a large deep pan or wok ( 200°C). To test oil, drop a piece of pappadum into the oil. If it starts to expand and bubble, the oil is hot enough. Gently drop the pappadums one at a time, holding under the oil with tongs. Take out the pappadums within 3-4 seconds. Place pappadum upright and drain excess oil. Then serve.
Golden raisins are plump, juicy, and full of flavour. Use them to give a burst of sweetness to mild curries such as korma, or stir through fluffy rice with turmeric and cashew nuts for a jeweled side dish. Golden raisins also work very well in sweet dishes such as rice pudding or even baked into bread dough along with walnuts, to serve with cheese.
