1. Boil the brain in water for 10 minutes and discard the water. Remove top lining on the brain and chop it into small pieces.
2. Heat oil/ghee fry the onions until light golden. Add garlic, ginger, green chillies and Shan Special Brain Masala mixed in 2 tablespoons of water.
3. Stir-fry 2-3 minutes. Add the boiled brain and stir fry continuously for about 5-7 minutes. Add green coriander, butter and stir. Serve with naans.
